Spring Recipe: Grilled Mahi-Mahi with Mango-Avocado Salsa

Ingredients
For the Mahi-Mahi:
2 fresh Mahi-Mahi fillets (or any firm white fish like snapper or halibut)
1 tablespoon olive oil
Juice of 1 lime
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon sea salt
¼ teaspoon black pepper
For the Mango-Avocado Salsa:
1 ripe mango, diced
1 ripe avocado, diced
½ small red onion, finely chopped
1 small jalapeño, finely chopped (optional for spice)
Juice of 1 lime
2 tablespoons fresh cilantro, chopped
½ teaspoon sea salt
1 teaspoon honey or agave nectar
Instructions
Marinate the Fish: In a small bowl, mix olive oil, lime juice, cumin, smoked paprika, salt, and black pepper. Rub over the Mahi-Mahi fillets and let sit for 10-15 minutes.
Prepare the Salsa: While the fish marinates, combine mango, avocado, red onion, jalapeño, lime juice, cilantro, salt, and honey in a bowl. Gently toss to mix and set aside.
Grill the Fish: Heat a grill pan or outdoor grill over medium-high heat. Cook Mahi-Mahi for 3-4 minutes per side, or until it flakes easily with a fork.
